Time for broccoli! Broccoli is high in many nutrients, including fiber, vitamin C, vitamin K, iron, and potassium. This vegetable can be enjoyed raw or cooked, but recent research shows that gentle steaming provides the most health benefits. Broccoli has a reputation as a superfood, given that it is low in calories but contains a wealth of nutrients and antioxidants – AND is an anti-inflammatory powerhouse!

Ingredients
- 4 pounds broccoli
- 4 garlic cloves (peeled, sliced thin)
- Extra virgin olive oil or butter flavor coconut oil for keto
- 1½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 2 teaspoons grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- ⅓ cup freshly grated Parmesan cheese
Directions
- Preheat oven to 425 degrees F.
- Cut the broccoli florets from their thick stalks, leaving an inch or two of stalk attached and discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets.
- Place the broccoli florets in a large bowl. Add the sliced garlic and drizzle with 5 tablespoons of olive oil. Sprinkle with the salt and pepper.
- Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
- Remove the broccoli from the oven and immediately place back into the large bowl. Toss with 1½ tablespoons of olive oil, along with the lemon zest, lemon juice, and Parmesan cheese.
- Serve hot.
